Crepes are an easy and enjoyable food comprised of flour, eggs, milk, and butter. Crepes are known for being very thin, sweet, and flexible, making them perfect for filling, rolling, and folding into many dishes. They go great with all the sweet and savory flavors. You can literally add anything from frosted fillings, fruits, chocolates and yogurts to ham, eggs, ricotta and so much more!

Ingredients:

1 cup all-purpose flour

½ tsp salt

2 large eggs, room temperature (NOT cold)

1 cup milk, warmed

3 tbsp of melted butter

¼ cup of water

2 tbsp spoons of cooking oil to grease the skillet
Now, before you cook, you may want to consider the following items:

Using slightly warm or room temperature milk and eggs will help the melted butter incorporate more evenly into the batter rather than having it harden up as soon as coming in contact with the cold eggs and milk.

If you want to make your crepes sweeter, add 1 tbsp of sugar and ½ tsp of vanilla extract to your batter!
Instructions:

Add flour, eggs, salt, milk, melted butter and water together into a large bowl until it forms a smooth and slightly thick batter.

Let the batter rest for 30 minutes at room temperature. Leftover batter can rest covered in the refrigerator for up to two days.

When ready, heat a 10-inch skillet over medium heat. Once hot, brush with ½ tsp oil.

Pour about ⅓ cup of batter into the skillet and begin to tilt the skillet in a circling motion so the batter evenly covers the bottom.

Allow the batter to cook until mostly set, then flip and cook until golden brown on the second side. The cook time will depend on the skillet type.

Repeat this process with the remaining batter, adding more oil as needed to the skillet. As you cook the crepes, stack them on a plate and cover with a paper towel to keep warm.

Once all crepes are cooked, you can then fill, fold, or roll the crepes and serve.
