Don’t like carrots? Well, this dessert might change your mind. This delightful and savoring delicacy will have you barreling through your own grandmother just to lick the serving plate.

 

I would like to present to you with carrot cake. Now, you might have heard of carrot cake before and may or may not like the sound of it, but carrot cake is not what you think it is. This tasteful cake consists of a fluffy and soft cake, smooth cream cheese icing and a variety of delectable alterations you can make to suit your palate.  Although carrot cake does, in fact, have the word “carrot” in the name, it definitely does not come close to tasting like carrots. How about giving it a try? Here is the recipe to completing this full-flavored cake. 

 

Materials:

  • 2 medium sized bowls

  • 2 circular or rectangular pans

  • A rubber or wooden spatula

  • whisk

  • Mixer (optional)

 

Ingredients:

  • Spice cake mix - follow ingredients from the cake mix box

  • 2 cups of powdered sugar

  • 2 cups of shredded carrots

  • 1 cup of pecans (optional)

  • 2 (8 ounce) packages of cream cheese

  • 1 (8 ounce) cool whip, thawed

 

Steps:

  1. First, preheat the oven to 350 degrees and prepare pans with cooking spray.

  2. In one bowl prepare cake mix batter according to the box. Mix in the shredded carrots. 

  3. Then, evenly distribute the cake batter into two of your pans with the spatula. When done, pop them into the oven for about 25-30 minutes.

  4. In another bowl, mix together the 2 (8 ounce) packaged cream cheese and the 2 cups of powdered sugar with a whisk until blended.

  5. Next, stir the cool whip into the cream cheese and sugar mixture. Although most people like having fluffy frosting, you are welcomed to make your frosting as dense as you’d like. 

  6. Once the two cakes are baked, take about 1 1/ 2 cups of the frosting and spread it on top of one cake layer. 

  7. After that is completed, gently place the second cake layer to the top of the layer you just  frosted.

  8. Now, for the fun part: Spread the rest of the frosting on top and the sides of the cake. Pop the completely frosted dessert in the refrigerator until cooled.  You’ll know your cake is properly cooled if the frosting is firmly adhered to the cake.

  9. If you are a pecan lover, then you may add pecans for a garnish on top. Others like to decorate with orange-frosting carrot decorations, but, if you ask me, that’s a little too on the nose.

While fulfilling this delicious recipe, I hope you found some enjoyment and bursting flavors in this carrot cake. Not only does this recipe have to be just for you, but can be brought to eat at family and friend gatherings to satisfy everyone’s dessert cravings. Now, I know many people have different opinions on cake flavors, but, come on - this is THE cake.
