Green Onion and Sweet Potato Latkes

Major props to Tablespoon for creating this bomb recipe. So the first time I tried to make this, I found myself wandering around the grocery store for fifteen minutes trying to figure out where they kept the “green onions”. I didn’t know until much later that those are scallions. Luckily, they both taste great in this dish! I recommend using plain onions. Less stress in the supermarket. This recipe is a twist on the traditional Hanukkah “potato pancake”. Perfect for breakfast, or as a snack!

Ingredients

2 medium (1 lb) sweet potatoes, peeled & shredded

2 medium onions, finely chopped (2 tbsp)

¼ c vegetable oil

¼ c all-purpose flour

½ tsp salt

⅛ tsp pepper

1 egg, slightly beaten

1 ½ c sour cream

Instructions

  1. 1. In a 12-inch skillet, heat ¼ vegetable oil over medium-high heat. 

  2. 2. Drop uniform-sized portions of mixture (I used tablespoons and eventually my hands; the more mixture you have the harder it is to get it to stay together in the pan. However, the taste ends up being the same, regardless of whether it is cooked sauteé style or in pancake form) in the skillet. Flatten slightly if you're set on making the "pancake" version. 

  3. 3. Cook 4-5 minutes until golden brown, turning once halfway through.

  4. 4. Drain latkes on paper towels; serve immediately with sour cream.
